Educational content such as Dr. Bergโ€™s analysis has over 500k views on Youtube while the Kefir hashtag has 111.7M views with many videos showing how to make Kefir at home. Kefir is a fermented dairy product that is made by adding kefir grains to milk.

The fermentation process produces a slightly sour taste and a texture that is similar to thin yogurt. One of the unique features of kefir is the presence of Lactobacillus kefiranofaciens, a species of bacteria that is exclusive to kefir, known for its ability to produce a polysaccharide called kefiran. Kefiran has been shown to have a prebiotic effect, helping support the growth of other beneficial bacteria in the gut to improve digestion and support a healthy immune system.

Typically greater than 99% lactose free, the probiotics in yogurt ferment the milk sugar into the potent and highly-sought Alpha-lipoic-acid. Alpha-lipoic acid is a potent antioxidant that has been shown to have anti-inflammatory and anti-aging properties. It is also known to help regulate blood sugar levels and to improve insulin sensitivity.

As familiarity with the benefits of Kefir grow, opportunities for innovation follow. Restaurants are experimenting with kefir dressings, cheeses, and sparkling water to provide an exciting invitation to try Kefir.
